You may have heard a lot about “superfoods” and been wondering what on earth they are. From my understanding, it’s foods that are packed with nutrients for you to cram a lot of healthy eating into a meal. I’m not super bothered about this kind of thing usually, but it just so happens that a dish I like to eat contains the quintessential superfood, quinoa. It’s packed with protein, fibre, and minerals, and is easy to throw into many dishes.
This recipe I’m sharing is similar to something I used to buy from a restaurant in the UK called Pret a Manger. I’m not sure they carry it anymore, but it’s cheaper to make at home anyway. You can make up a batch with this recipe to last 3 or 4 days.
1/2 cup quinoa
1/2 cup red rice
1/2 cup frozen edamame beans
2 salmon fillets
Preheat your oven to 190 C/375 F. Prepare your quinoa, rice and edamame according to the packet instructions. Once these are all cooked, mix together and store in a plastic container.
Squeeze about 1/4 a lemon over your salmon and dribble some olive oil over the top. Add some salt and pepper, then bake for 15 minutes or until done. Using a fork, push your salmon around to create flakes. You can store these in a ziplock baggy.
When you’re ready to prepare a portion, cut half an avocado into cubes. Scoop some of your quinoa mix onto a plate and add avocado and salmon. Salt to your taste and squeeze some lemon over the whole dish.
Once you create the salmon and quinoa mix on the first day, the following days are pretty quick to make this dish. Salmon is full of omega-3, which is good brain food, and avocados are also full of health benefits. All of this combined with quinoa, makes for a pretty kick-ass start to your day!
